Lemon Gem
From Morri Street Café on Hardy Street.
Rolled in colorful sprinkles, these melt in your mouth cookies are pretty enough for a party.
We make a lot of them for the whole family.
4 Eggs
240g Sugar
70g Butter
100g Cream
185g Flour
2 lemon Jests
1 tsp Baking Power
Mix all the above ingredients together.
Pour into a mini loaf tins.
Bake at 180 for 20 minutes or when a skewer comes out clean.
1 cup Sugar
2 cups Water
2 lemon Jests
Bring to the boil.
Pour over syrup while gems are still warm.
