Bring the rich heritage of Little India into your kitchen with this vibrant, flavour‑packed Prawn Jhalfreezee. It’s a sizzling stir‑fry that’s fragrant with spice, tender prawns, and vibrant capsicum – ideal alongside basmati rice or warm naan.
Ingredients (Serves 6)
✨ 3 tbsp canola oil
✨ 6 cloves
✨ 2 sticks cinnamon
✨ 1 tsp carom seeds
✨ 1 tsp ground coriander
✨ 1 onion, finely diced
✨ 1 tbsp crushed fresh garlic
✨ 1 tbsp crushed fresh ginger
✨ 1 tsp ground turmeric
✨ 1½ tsp garam masala
✨ 1 tsp salt
✨ 2 medium tomatoes, diced
✨ 2 tbsp tomato paste
✨ 24 large prawn cutlets, deveined and shells removed
✨ 1 bunch spring onions, chopped
✨ 1 red capsicum, cut julienne‑style
✨ ½ cup coconut milk
✨ Salt and red chilli powder to taste
✨ Chopped spring onion or fresh coriander to garnish
Method
🧡 Heat the canola oil in a large pan over low heat. Add the cloves, cinnamon sticks, carom seeds and ground coriander. Cook gently until the aromas of the spices begin to emerge.
🧡 Add the finely diced onion, stirring continuously so it doesn’t stick. Cook until the onion is almost brown.
🧡 Stir in the crushed garlic and ginger, cooking until softened and lightly browned. Then add the turmeric, garam masala and salt; continue cooking until the spice aromas deepen.
🧡 Add the diced tomatoes and tomato paste, stirring through. Cook until you begin to see the oil separating from the onion‑spice mixture. This is the tarka base. Make sure you take your time and keep stirring so nothing sticks to the bottom.
🧡 Add the prawn cutlets, chopped spring onions and capsicum to the tarka base. Turn the heat down to low, stir in the coconut milk, and cook for 7‑10 minutes, until the prawns are cooked but still juicy.
🧡 Season to taste with salt and red chilli powder. Garnish with chopped spring onion or fresh coriander. Serve warm and savour every bite.
