Don’t wait for an occasion: Little India Nelson
Slow-simmered and rich with spice, Lamb Bhuna Gosht is the kind of dish that asks you to slow down. The sauce is thick and deeply flavoured, the lamb tender enough to fall apart with a fork. It’s bold, comforting and beautifully balanced – made for savouring.
Ingredients (Serves 6)
✨ ¼ cup canola oil
✨ 1 onion, puréed to a fine consistency
✨ 2 tbsp crushed fresh garlic
✨ 2 tbsp crushed fresh ginger
✨ 500g lean lamb leg, cut into 3cm x 3cm cubes
✨ 1 tsp ground turmeric
✨ ½ tsp garam masala
✨ 1 tsp paprika
✨ 3 medium tomatoes, diced
✨ 1½ cup tomato purée
✨ ½ cup chopped fresh coriander
✨ 1 cup cold water
✨ Salt and red chilli powder to taste
✨ Chopped fresh coriander to garnish
Method:
🧡 Heat oil in a large pan over low heat. Add the puréed onion and stir continuously until deep golden brown.
🧡 Stir in the garlic and ginger. Cook gently until softened and fragrant.
🧡 Add the lamb and cook until just browned. Mix in the turmeric, garam masala, paprika and salt. Let the spices toast briefly until they release their aroma.
🧡 Add diced tomato and continue cooking until the oil begins to separate from the onion and spice base. Stir often – this step builds the flavour.
🧡 Pour in the tomato purée, coriander and water. Stir to combine, cover, and simmer gently until the lamb is tender and the sauce is thick and rich – around 2 hours or more.
🧡 Season with salt and chilli powder to taste. Garnish with fresh coriander and serve hot.
📍 Cook’s note: This is a slow-cooked curry where richness comes from reduction. Add extra water only if needed. A pressure cooker will shorten the cooking time, but patience brings the best flavour.
