Kai Fusionz Crayfish Pie

Whole crayfish 1.3kg – cooked

Blue warehou 100grms – diced

1 can Coconut cream

1 can Water

1 Leek – sliced thinly

1 Carrot – sliced thinly

Fish stock to taste

Cornflour

Kai Fusionz spice blend

Sea salt

Savoury Pastry

 

Method

Panfry leek and carrot till soft, add fish stock, simmer

Add coconut cream & water, simmer then blitz

Add cornflour & cook through till a nice thick consistency

Add cray fish & fish

Season

 

Line individual pie tins with pastry, fill with pie mix, plop a lid on top and turn the edges, egg wash.

Cook 220, 15 mins.  Makes aprox 18
