LOW CARB CARROT CAKE PANCAKES (OVEN BAKED)
You will need
1 packet of sweet not sugar keto vanilla cake mix
2 tbs melted coconut oil
1 tsp of cinnamon
1 grated carrot
1/2 cup chopped pecans or walnuts
Follow the instructions on your vanilla cake mix. Once this is done add the carrots, cinnamon and chopped nuts. Don’t worry if you knock air out of the mix (it doesn’t need to be as fluffy)
Your oven should be pre heated to 180°C
Line two trays with baking paper and place spoonfuls of the mixture on the trays in the size you want you pancakes to be. (They will spread slightly) Bake until golden brown and baked through. This should only take between 7 and 10 mins.
Serve with caramel fibre syrup and whipped cream!
