These are the carrot cakes from today’s live. Beautiful and moist! It made 9 Texas size muffins, so would definitely make a good size cake. The icing was just allulose (powdered at speed 10 in the thermomix) butter, cream cheese and vanilla bean. Isla decorated one for Kaspers birthday. I just swapped out the grapeseed oil to olive oil and used sweetener instead of sugar.
